Quinoa Kale Salad

Does anyone else feel like chopping veggies can have a therapeutic effect? After a pretty frustrating day at work, which I have yet to emotionally disconnect from, it was calming to take some fresh produce out of the fridge and start cooking.

The result was a pretty great quinoa kale salad.

Vegan Quinoa Kale Salad

Ingredients:

  • 1 cup of quinoa, cooked in two cups of water
  • 3 tablespoons olive oil
  • 1/2 cup chopped mint leaves
  • 1/2 cup almonds
  • 1/2 cup dried cranberries
  • 1 cup chopped kale
  • 1/2 cup mini carrot disks
  • 2 chopped scallions
  • 1/2 cup sliced celery
  • about 25 halved grape tomatoes
  • 1 juiced lemon
  • 1/2 cup lemon zest
  • salt and pepper to taste

Directions:

Cook the quinoa and fluff it with the olive oil when it’s done. Add the other ingredients and stir well.

Yum. Desert was chocolate covered ginger and dark chocolate peanut butter cups from Trader Joe’s. Also therapeutic.
